The cocoa beans for this special bar are fetched from the Caribbean by wind power with the sailing ship the Tres Hombres and brought to the quay in Amsterdam. De Dominicaanse Republiek is een bekende leverancier van Trinitario cacao. Onze partner Conacado is een coöperatie die 10.000 kleinschalige cacaoboeren vertegenwoordigt en de omslag in gang heeft gezet naar goed gefermenteerde Bio en Fairtrade cacao voor klanten met hoge kwaliteitseisen. Zij hebben over het eiland grote installaties gerealiseerd verdeeld over zeven regio’s waar de cacao naartoe wordt gebracht om daar onder constante kwaliteitscontrole gefermenteerd en gedroogd te worden.
Organic cocoa ensures good biodiversity on the plantations in two ways: it improves the organic matter content of the soil, which keeps the soil life at a certain level and improves the water balance of the soil. It also requires the planting of shade trees, creating niches for birds and insects!
